Lasagne Rolls

Compliments of: Tawny Thomas
10 lasagne noodles, cooked, drained, and cooled enough to handle
1 jar (26 oz.) spaghetti sauce
16 oz cottage cheese
2 c. grated mozzarella cheese or grated Italian cheese mix
2-3 Tbs. Parsley (dried)

In a bowl, mix cottage cheese, parsley, and most of the grated cheese (save some for the top if you wish). Pour and spread half of the spaghetti sauce into the bottom of a 9 x 13 inch casserole dish. On a separate surface, lay out cooled lasagne noodles one or a few at a time and place a good amount (1/3 c maybe?) close to the end of each noodle. Roll each noodle with filling (until it looks like a short, fat burrito) and place side by side in the casserole dish. I had two rows of five lasagne rolls. Pour and spread the other half of the spaghetti sauce over the top of the lasagne rolls, and sprinkle remaining cheese on as well. Bake at 400 degrees for 30 minutes.
