White Bread

Recipe makes 2 loaves (double recipe for 4 loaves)

5 1/4 C. white unbleached bread flour
1/4 C. sugar
1/2 Tbsp. salt
1 1/2 Tbsp. rounded yeast

Mix these ingredients and then add:

1 1/2 Tbsp. liquid lecithin
2 C. hottest tap water

Mix together for 1 min. Check consistency. If it is the correct consistency (it usually is), then mix an additional 5 min. Roll the dough into loaves and place in greased bread pans and let rise for 25 minutes. Bake at 350 degrees for 25 minutes.
