Cinnamon Nut Muffins

1 1/2 cup whole wheat flour
1 cup oat flour
1/4 cup flax seed meal
3/4 cup brown sugar (or honey)
1 Tbsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 cup Hershey's cinnamon chips
1 cup chopped nuts
2 eggs beaten
1 1/2 cup milk
1/4 cup vegetable oil

Combine and fill muffin cups, then sprinkle each muffin with streusel topping. Bake @ 350 for about 20 minutes or until done in the middle.

Streusel topping:
1/2 cup old fashioned rolled oats
1/4 cup wheat germ
1 Tbsp. brown sugar
1/2 tsp. cinnamon
1 tsp. oil

Combine dry ingredients then drizzle mixture with oil until mixture is crumbly then sprinkle over muffins and bake as above.
