Greek Salad

5 cups bite-size pieces spinach
4 cups bite-size pieces romaine lettuce
1/2 cup crumbled feta cheese
1/4 cup sliced green onions (with tops)
24 pitted ripe olives
3 tomatoes, cut into wedges
1 cucumber, sliced

Toss all ingredients. 8 servings. 130 calories per serving

Dressing:
1/4 cup vegetable oil
2 Tbsps. lemon juice
1/2 tsp. sugar
1 1/2 tsp. Dijon mustard
1/4 tsp. salt
1/8 tsp. pepper
Shake all ingredients in tightly covered container
